Vegan Fudge with vanilla and pecans

Took my mum a bag of museli at the weekend and she couldn’t have been more disappointed lol.  When I handed her the bag, she asked “is it tablet?” with this really excited, expectant look on her face.  When she opened the bag she thought it was birdseed!

I said at the time that I couldn’t make tablet any more since it contained lots of dairy but later on I got to thinking that surely it must be possible.  So today, I decided to experiment and I made some fudge.  The main issue with the tablet recipe is that you use condensed milk and I don’t know a non-dairy substitute for that, but there are lot of fudge recipes that don’t use it so it should be as simple as replacing milk with soya milk and butter with non-dairy spread, right?  Of course if the consistency of the milk has some bearing on the chemistry of the mixture then I was going to be out of luck.  I cracked on with it anyway and everything seemed to be pretty normal except that it took a lot longer to get to soft ball stage than usual and then when it came to the beating, it seemed like it was never going to thicken up, and I did think a few times that I’d probably have to just dispose of the mixture.

Anyway, long story short, it worked in the end.  It went from looking like it was never going to thicken, to just suddenly being ready.  I added vanilla and pecans in before it got too thick and got it in the tray before it was too late.

The verdict:  looks like fudge, tastes like fudge

Update:  took tin of fudge over to mum’s today 27th, and she loves it.

Update 2: the 12 pieces I left her yesterday are gone, she ate them all in one evening.
