I’m supposed to be following a whole foods plant based diet now that I’m a vegan, but it occurred to me that I’ve mostly been following a whole CAKE plant based died for about the last year so I’m upping my intake of fruit and veg and trying to be a good healthy vegan.
I think the problem started when I first became vegan and I was worried about things that I would no longer be able to have – like lots of cake – and so I spent a lot of time experimenting with vegan cake recipes and of course you gotta try what you make right? So I got off track a little whilst making wonderful baked goods and wondered why I was gaining weight – is there such a thing as a fat vegan? well probably if they eat a lot of tasty vegan baked goods and vegan processed foods.
*sigh* Life is hard without cake but it’s not forever…
